This Winter we have had many volunteers helping in the gardens, the carpenters have been back constructing pergolas, herbal workshops taking place. Plenty going on at Ceratonia and as the Winter festivities are about to begin, In the true nature of Winter Solstice, we are about to take a rest. A pause, time with family and friends. Celebrate what we have done this year and recharge our Spirit and Strength.

Thank you to Pascal and Paul who helped harvest our almonds in the Autumn. More cracking to do, but we have been soaking them with sunflower seeds in water over night. Strain off water and blend with raisins and figs, make into balls and roll in coconut and coco powder. You can experiment with this recipe given by Maureen, they are delicious and healthy!
Almonds are a great source of omega 3, minerals and vitamins especially Zinc and the B vitamins. These wonderful nuts keep you regular, soothe a cough, improves circulation and nourish and strengthen the nervous system. Just some of the amazing virtues! A note on the Latin- the almond is also known as Prunus, but I like the old name Amygdalus. It is amazing and incredible to think it has just been one year since we moved to Ceratonia, living in our tepitent and properly experiencing the land for the first time. So a year on and we are living in the Centre that we have built, the gardens are transforming, friends and family have come to visit and given great positive feedback. Volunteers are coming and helping, the clinic has started, we have had our first Plant study and many people showing a keen interest in coming and learning about herbal medicine. And all this time we have been experiencing the wonderful and beautiful Portugal. Wow! A lovely lady named Rita, recently shared some permaculture wisdom to me. There are four important themes to remember when achieving anything in life. Dream. Think. Do. Celebrate. Celebration is certainly something that we at times need to remember to do more often! Finally the rains have stopped for the moment and some of our roses are blooming and the Wild Jasmin is glorious with its yellow flower. Everywhere has a lush greenness and now with some sunshine I think we will see a few more flowers come into action! The final render started this week which is great, looking good. We have ordered the tiles for the terrace from a traditional tile maker, they will I hope be ready end of January.. The rain has slowed some gardening work down, hard work managing the thick sticky clay!!
